12/27 Dinner: Leftover turkey sandwiches
Our Christmas turkey wasn't very big, in fact it was tiny compared to the birds we eat back home in Canada. Must have been a baby, which makes sense as it was really tender. Anyway, as small as it was, we did have leftovers. Enough for a few meals- Atsuko took some home and had it for dinner the next day, we have the bones and carcass in the freezer waiting for the soup pot, and today we used up the meat for sandwiches.
I toasted some pane Campagnolo (a hearty Italian bread popular in Japan) and left it unbuttered; the filling was mizuna greens and pieces of turkey simmered in gravy until it had thickened up (the gravy is so dark because I flavoured it ith some of the extra soy sauce-based basting liquid that came with the turkey).
Served with a vegetable and sausage soup. These were some good sandwiches. The turkey was still delicious, and was even more soft and tender after being simmered in gravy. The soy sauce gravy added a deep flavour and just the right amount of moisture, and the mizuna held up and gave good crunch. I seriously think I like these leftovers better than the original dinner.

My gosh, those turkey sandwiches look wonderful...I'm glad you explained how they got so dark...Making them look all the more delicious....The soup looks good, too.

Thank you! I'm not very creative with turkey leftovers, but never have enough of them to do much with. Sandwiches always use everything up nicely.
